WALIIF COFFEE SUPPLY

Yirgacheffe zone officially called Gedeo is a zone within the state of Southern Nations and Nationalities People’s Region. Coffee is sold under the name Yirgacheffe- which is a woreda (district) within the Gedeo Zone. Yirgacheffe is part of the Sidamo region, it’s sub-divided into its own trademarked micro-region due to its exceptional coffees. The quality of Yirgacheffe coffee has allowed it to become as well-known characteristics with the best Sidama coffees. Mild Fruit flavors, a bright acidity, and a smooth taste are some of its features. Instead of being picked and dried immediately, wet processing requires thorough washing. Once they are clean, the beans sit on rotating beds for 48 to 72 hours. This dries the entire bean evenly. Wet processing removes the traditional fermented yirgacheffe flavors and creates a lighter bodied coffee bean with citrus and floral notes.

Limu is a high-quality wet-processed (washed) Ethiopian coffee that exhibits a relatively low acidity yet is somewhat sharp. The brewed cup is distinguished by its well-balanced body (mouthfeel) and noticeable winey and spicy flavors, often fruit-toned, pleasantly sweet and vibrant with floral overtones.

Limmu is one of the zones in the Oromiya coffee growing regions of southwest Ethiopia. Limmu coffee grows at an elevation of 1500-1900 MSL producing medium-sized beans with a characteristic round shape and a greenish colour. It is generally washed and it has a similar cupping profile to Sidama and Yirgacheffe coffee having a citric acidity, with soft berry undertones and chocolate-floral notes. The flavour is generally characterized by a balanced and clean cup.

Limmu coffee is regarded as premium gourmet coffee with its distinctive terroir and variety. The coffee brew has a well-balanced mouth feel and vibrant floral overtones. It is balanced, sweet, slightly spices with pleasant wine like characteristics. Some Limmu coffee also have floral and stone fruit notes.

Sidamo is a region in the part of Ethiopia. Its name has it’s from a native ethnic group of Ethiopia, called Sidama, which are located in the south-central part of the country. Their major political state was the ancient Kingdom of Sidama. The old political map says Sidama was bordered by Gama-Gofa on the west, and Oromia .Ethiopian sidamo coffee beans: Sidamo is one of the most prolific growing regions in Ethiopia, putting out large volumes of consistently great coffee each year. Sidamo coffee is known for its floral, citrusy aroma, and it tends to have a medium, smooth body. It’s more earthy than other Ethiopian coffees, with a bright finish and low acidity. With such an enticing flavour profile and proud history.

The region of Sidamo is 1,500-2,220 meters above sea level. Coffee grown at these higher elevations grow more slowly and allow more time to absorb nutrients which are then delivered to the coffee bean and help develop more robust flavours. Ethiopian Sidamo is consistently rated one of the best coffees in the world.

    

 

Named after a tribe of the Oromia people, Guji is one of the zones of the Oromia region of Ethiopia. Guji is surrounded by Borena in the south, by the Southern Nations Nationalities, and Peoples Region on the west, on the north by the Ganale Dorya River which separates it from Bale and on the east by Somalia region. The highest peak in this zone is the Mount Dara Tiniro. Major cities and towns in this zone include Nagele Borana the administrative center. The ceremonies, customs and wisdom that come with the Gada age group system are still widely followed among the people. Besides the system, coffee farming is ingrained in the Guji culture- the two are inseparable. In terms of topography, culture, and flavours, coffee from Guji has a distinct terroir while sustaining the classic characteristics like the Aromas of sweet peach and chocolate. A very big, bold character with a smooth, chocolate mouthfeel. Spicy, exotic, and clean.Oromo region: rich with extravagant dark chocolate notes, jasmine, and crisp, sweetly-tart acidity. Previously, Guji produced both washed and naturals exclusively, but of late producers have started to offer honey’s as well.Guji coffees offer a composite, yet balanced cup profile that blends with both filter and espresso.                      

Nekemte, also called Nakamti is a city and a woreda of western Ethiopia. It was the capital of the erstwhile Welega province and is home to a museum of Wollega Oromo culture. It is located at an elevation of 2,088 at the coordinates of 9°5′N 36°33′E.

Nekemte coffee is produced in Western Ethiopia and it is highly valued for its pleasant fruity flavour. At times the higher-grade coffee can be unique with honey, citrus, and floral notes. It has long elongated beans with a green to brownish colour. The cup is generally clean with slight fruity acidic taste and body of the best quality mocha. It forms an important part of a specialist roasters blend, but it is also is an excellent gourmet single. Jimma Coffee is a type of coffee that is grown in the Jimma Zone of the Oromia Region in Ethiopia. It is known for its distinct flavor profile, which is characterized by balanced acidity and sweetness, as well as notes of citrus, berries, and chocolate.

Jimma coffee is typically grown at high altitudes, with farms ranging from 1,500 to 2,200 MASL. The region has a tropical climate with ample rainfall, providing ideal growing conditions for coffee plants.

Coffee production is a major source of income for farmers in the region and is an important part of the local economy. The coffee beans are often sold to specialty coffee roasters around the world, who prize the unique flavor profile of Jimma coffee.

this is produced in the eastern highlands. The bean is medium in size, with a greenish-yellowish color. It has medium acidity and full body, and a distinctive mocha flavored. It is one of the highest premium coffees in the world. It is called Harar long berry.

Is a chemical process by which aromatics acids and other flavor component are either created balanced or altered in a way that should augment the flavor, acidity, aftertaste and body of the coffee as desired by the roasts.

Waliif Coffee Roast Type

Light roast

Light brown to cinnamon color. Low body and light acidity. The beans are dry. This roast is too light and does not allow the coffee to develop to its fully potential.

Medium roast

Medium brown color. The acidity brightens and body increase slightly. The bean is mostly dry. It gives good aroma and flavor/character.  It develops the volatile substance such as caffeine and false acidity and body will not be developed. This type roast is used for the laboratory purpose.

Medium dark

Rich brown color. Very small droplet of oil appears on surface. The acid is slowly diminished Color with the oil in the bean surface giving as shiny appearance. And body is most potent. This is the ideal roast for a well-blended expresso

Dark roast

deep brownish/black color. The bean has spots of oil or is completely oily. Substyle nuances are diminished. Flavor decreases, while body dominates. It gives false body and kills acidity.
